Tomato Juice – 14 Quarts

Purchased 45 lbs organic and heirloom tomatoes from Hillyard Field Organics. Tomatoes were purchased as “seconds,” but were perfect for making tomato juice. After removing stems, cores, bruises, splits, and other blemishes, I tossed quartered tomatoes into my juice extractor. Once all were juiced, I simmered it on the range until the juice bubbled, removing any scum. Then I hot-packed the jars using 1t of sea salt and 2T lemon juice. Placed jars in a water bath canner for 45 minutes. Because I used the whole tomato, including skin, the juice was full of nutritious pulp and created an extra thick juice that will be perfect for soups and stews.
